100g vermicelli noodles
1/2 cup laksa paste
2 x 400ml can coconut cream
2 cups shredded barbecue chicken
1 cup chicken stock
150g snow peas, thinly sliced
3 green onions, thinly sliced
coriander, chilli and green onion to serve
1. Place noodles in a heatproof bowl. Cover with boiling water. Set aside for 5 minutes or until tender. Drain well.
2. Meanwhile, heat oil in a medium pan over high heat. Add paste. Cook, stirring for 1 minute or until fragrant. Pour in coconut cream, chicken, stock, snow peas and onion. Simmer for 2 minutes or until heated through and snow peas are tender.
3. Divide noodles among bowls. Top with laksa. Sprinkle with garnish if desired.
